Small pancakes

Ingredients for 4 portions:

  • 300 g (10.6 oz) flour
  • 3 eggs
  • 3/8 liter buttermilk
  • 4 T mineral water
  • 1 pinch of salt
  • Clarified butter for cooking (Butterschmalz)
  • Sugar for dusting
  • Plum compote or fresh, mixed berries

Preparation time: about 20 minutes

Per portion: 500 calories

Directions:

  1. Sift the flour into a bowl and beat together with the eggs.  mix in the buttermilk, mineral water, and salt. The batter should not be too thin.  Allow to sit a few moments.
  2. In a heavy pan, melt the clarified butter and pour the batter in to form palm-sized pancakes.  Cook each side about 3 minutes, until golden brown.  Keep warm, until all pancakes are baked.
  • Per preference, sprinkle with sugar and serve with plum compote or with fresh, sugared berries.
