The recipes in the Real German Cuisine Challenge are from the German recipe book Die echte deutsche Küche and will be translated by me over the next couple of years.
Beeren-Kaltschale (Cold Berry Bowl)
Cool breeze with buttermilk
Ingredients for 4 portions:
- 500 g (17.6 oz) mixed berries (e.g., rasperries, black and red currants, can be replaced with fruit puree)
- 50 g (1.76 oz) dry rye bread (Schwarzbrot), or small macaroons as a garnish
- 1 liter well-cooled buttermilk
- 50-75 g (1.76-2.6 oz) sugar, depending on taste and berry sweetness
- 1 pinch cinnamon
- 1/2 tsp lemon zest
Preparation time: about 15 minutes
Per portion: 220 calories
Directions:
- Wash the berries, remove the stems and dry well. Set aside some berries to use as a garnish.
- Grate the bread to make fine breadcrumbs.
- In a blender, whip the cold buttermilk with the sugar, cinnamon, and lemon zest until foamy.
- Blend in the berries or fruit puree well, then distribute into bowls or deep plates. Garnish with the leftover berries. Sprinkle with the rye breadcrumbs or decorate with the small macaroons.
- Variations: The cold berry bowl also tastes delicious made with whole milk yogurt, with vanilla added, and made with fresh, aromatic peaches.
