Real German Cuisine Challenge: Harzer Lamb in Buttermilk

This week’s challenge was Harzer Lamm in Buttermilch (Harzer lamb in buttermilk). The recommended side is Thüringer Klöße, but I cooked this at my in-laws and they don’t have a kitchen machine, so I skipped it.  My mother-in-law did make a potato dumpling to go with this meal that was half cooked potato and half raw, grated potato.  She added a lot of flour and the dough was really like kneading bread dough.  I’ll have to try it on my own and see how it comes out.  I wanted to film it for a Video Wednesday, I thought it would be really instructive, but my camera ran out of batteries and I didn’t have time to run to a gas station to pick some up.

Friday, I put the lamb into the buttermilk marinade.  I ordered this the same time as the veal knuckle and had the same problem.  I just said that I wanted a piece for four people, and the butcher ordered me a 3kg piece of leg, that fed us for three days (it was good, but my mother-in-law said enough after the second day, so Rainer and I were on our own on the third).

I removed the lamb from the marinade on Sunday morning, patted it dry, then browned it on all sides.

It got covered in bacon then I poured diluted Pinot Grigio over it and stuck it in the oven.

The sauce turned out really thin, but very good.  Normally I like my sauces more on the thick side, but this sauce went well with the meat.  We made green beans with tomatoes and bacon as the vegetable side.

The lamb was delicious.  Everything was delicious.  This was only the second time I’ve had lamb and I prefer the texture of beef and pork, but I did enjoy the roast quite a bit.  Not sure I’d want it more than once a year though.

Next challenge!

Will be Spargel mit Kratzete (white asparagus with torn pancakes).  I didn’t get a chance to translate the recipe.  I’d planned to once Oliver was asleep tonight, but it’s 11:30pm right now and he’s still going strong.  I blame Rainer giving him a chocolate bar at 9pm.  Rainer also cleaned the office with bleach about an hour ago, so I really need to keep this short and get out of here.  My eyes are watering a little.  I hope you won’t mind if we skip a week in the challenges because of this.  I’m crazy busy right now. Rainer’s brother’s family is coming for a visit tomorrow, so I know translating won’t happen before the weekend, and once they leave we’re heading to Munich for a friend’s birthday party.  Life is very hectic right now.  Hopefully I’ll get the recipe up on Monday.

I just wanted to say that I have been enjoying reading all the recipes, but after looking at a few it was clear that I couldn’t be part of this: we don’t eat pig and we don’t cook meat and milk together, so just about every recipe is not for us. It’s still been fun watching, though:). We should be back from Paris when you do the next one and asparagus with pancakes sounds like fun: I look forward to seeing the various versios you all make.

skipping a week is fine with me – but it was sure tempting to buy some white asparagus yesterday when I was at Whole Foods! Not sure if the stores around me have it or not… will keep my eyes open for them for next week!

@cn heidelberg: I’m so glad we skipped this week, I needed a mini-break!

@G: Yeah, German food is not very Kosher. Maybe there’ll be some things you can do later on. Out of the three Spargel recipes coming up, the two I can remember aren’t gonna work for you. But maybe some of the desserts this summer? Rote Gruetze will be a fun challenge!

@stephanie: Thanks! And I say you can never have too much white asparagus, although it took me a couple years of living in Germany to think that way. I didn’t think much of it my first year!
