On a recent shopping trip to Real in Regensburg, I discovered they had spinach! Spinach shows up from time to time in German supermarkets where I’ve lived, I’m hoping that it’s a regular feature of the supermarkets here (I don’t remember seeing it in the Real in Pentling and it’s not in our local Edeka, but I can make a special shopping trip to Regensburg every once in a while!). I used the opportunity to make one of my favorite meals: spinach salad. The recipe is from You: The Owner’s Manual, which has awesome recipes and is very informative about how your body works; I highly recommend the book. The only drawback is that a lot of the recipes use ingredients that are not that easy to obtain in Germany.
Warm Spinach Salad with Chicken, Apples, and Toasted Almonds
(2 servings)
2T sliced almonds, toasted
1 cup + 3T unfiltered apple juice
6 oz shredded, cooked, skinless chicken breast
1/2 tsp canola or olive oil
1/8 cup sliced shallots
1/2 T brown sugar
1/8 tsp cinnamon
1/8 tsp salt
3 cups packed, torn spinach leaves
1/2 apple, preferably Fuji or Gala, unpeeled and cut into 1/2 inch cubes (I love apples so I put in a whole one)
In salad bowl, combine chicken and 3T apple juice, toss well.
Heat a skillet over medium heat. Add oil, then shallots and sauté 5 minutes. Add remaining apple juice, sugar, cinnamon and salt. Simmer 5 minutes, stirring occasionally.
Add spinach, apple and almonds to chicken mixture. Add hot shallot mixture; toss well and transfer to serving plates. Serve with freshly ground pepper, if desired.

Yummy, we are afraid to eat fresh spinach these days because it comes from California. There was a recent e-coli scare with a number of people getting ill. I’ll have to wait till summer when I can grow it again…ciao

The Haddocks really like Spinach, but we do tend to use the frozen stuff. Perhaps I will grow some this year
